第三十五屆澳門藝術節。經典舞台劇<德齡與慈禧>

位於澳門君悅酒店一樓的中式餐廳滿堂彩，無論從門口精心擺設的中式茶壺，到室內舒適的座位，都結合了完美的中西設計佈局，使賓客享受到至為寫意的感覺。由大師級名廚主理的四個開放式廚房食檔提供精心炮製的中國美食：老式果木烤鴨、手拉麵、明爐小炒、點心，以及有多種甜品任君選擇，食不厭精，膾不厭細。 滿堂彩餐廳近日推出私人廂房招財進寶宴，食材珍貴，烹飪奇巧。繼以至精至繁之想，甄選名貴食材，融合多地精味，盛情打造貴賓房尊品珍宴。大展宏圖宴寄意前途似錦，原只生魚湯養生保氣，招牌果木烤鴨香嫩味鬱，孔府菊花魚細啄精味；招財進寶宴取義富貴滿堂，佛跳牆湯貴氣逼人，金華玉樹麒麟魚至鮮味長，川味麻婆豆腐香辣難擋。 在中西設計完美融合，現代古典相映成趣的私人廂房觥籌交錯，把酒言歡不失為一件樂事。隨著徐徐拉開的木門，映入眼簾的是木質桌椅，古色古香充滿中國傳統氣息，再細看周遭西式裝飾，不由讚歎設計師的巧思。稍稍坐下聽服務生介紹菜品，滿堂彩前菜盤，功夫臻品滋補湯，老式果木烤鴨，金華玉樹麒麟魚，椒鹽香酥羊棒，蔥香鵪鶉蛋海參，川味燒麻婆豆腐，滿堂彩油燜大蝦，金沙燜炒鮮涼瓜，滿堂彩包點薈萃，滿堂彩甜點薈萃盤：環球時令新鮮生果，一輪介紹完，不由莞爾覺得自己今天是要進一下澳門的ldquo;大觀園rdquo;了。 湯水在澳門人心裡有無可取代的地位，老火靚湯最是滋補美容。首先端上來的功夫臻品滋補湯，鮑魚經過高湯慢炖搭配精挑細選的瑤柱，料足味鮮，在乍暖還寒的時候喝一碗這樣的滋補湯水，真是回味無窮。當然，對於在北京待過一年，對北京烤鴨甚是想念的我，此次最翹首以盼的就是老式果木烤鴨，滿堂彩請來老北京的師傅採用老北京宮廷ldquo;掛爐烤鴨rdquo;製作方法，以棗木，梨木等堅硬果木為燃料，明火無煙，用挑桿規律地調換鴨子的位置，使得鴨子受熱均勻，皮層酥脆，外焦裡嫩。北京烤鴨的獨特不僅在烤製方法，也在師傅刀工和食用方法。剛烤製出爐的烤鴨，師傅庖丁解牛一般，片出一百餘片的鴨肉片，大小均勻如丁香葉，薄而不碎，刀工了得。烤鴨端上桌有三碟，第一碟是趁熱片下的烤鴨皮又蘇又脆沾著細細的白糖，細細品味有果木的香味。第二碟皮肉相間佐以蒜蓉和醬油，既沒有油膩感又多一絲辣意，風味獨特。第三碟烤鴨肉則用北京烤鴨最經典的吃法，挑一點甜麵醬抹在荷葉餅上，夾幾片烤鴨片放上聰條，黃瓜條或者蘿蔔條，將荷葉餅捲起，一口咬下去瞬間覺得不虛此行，真真是老北京的味道。 除了老北京果木烤鴨，滿堂彩包點薈萃也讓人印象深刻，水餃，春捲，肉夾饃和燒賣每一樣都是做法地道。最讓人唇齒留香的是肉夾饃，肉夾饃是陝西著名小吃，使用的肉是臘汁肉，除了肉的選材，用鹽，薑，丁香，桂皮，枇杷等二十多種調料煮成的陳湯也至關重要，用大鍋煮製的臘汁肉肉質軟糯，濃郁醇香。白吉饃也有講究：用麵粉揉成餅狀，置於鐵板上烤製成型，放入爐膛側立，炭火烘烤，烤至雙面微黃即可。上品的白吉饃用材精選，火候恰到好處， ldquo;鐵圈虎背菊花心rdquo;，皮薄鬆脆，內心軟綿。外酥里嫩的白吉饃配上陳年老湯熬製的臘汁肉，兩種食物絕妙的搭配，饃香肉酥，回味無窮。當然皮薄餡大的水餃，餡心香軟的春捲，肉嫩蝦鮮的燒賣，沒有哪一個讓人失望，都十分美味。 除了這些耳熟能詳的傳統美食，招財進寶宴裡還有一些其他名貴菜式，用料考究技藝精湛，值得一試。金華玉樹麒麟魚是其中一道，先把麒麟魚去掉骨頭，片成魚片，配上片狀的金華火腿和香菇放入鍋中一同蒸煮，出鍋時魚片嫩滑既有金華火腿的香味又有香菇的鮮味，味覺感受昇華到了新的層次。另外一道菜蔥香鵪鶉蛋海參，也可以叫做ldquo;烏龍吐珠rdquo;，味道濃香鹹鮮，海參烏黑紅亮，鵪鶉蛋鮮嫩，蔥香氣味濃郁，三者搭配更是新鮮感十足。滿堂彩油燜大蝦更是不得不提，選用晶瑩飽滿的大對蝦，主要以調味油和調味汁進行燜製，色澤淺紅油亮，火候正好，蝦肉熟而不老，口味鮮香醇厚，鮮鹹微甜。 享受完美食，甜點和新鮮生果也不能錯過。四碗甜點放在傳統風味十足的木質托盤上，紫色的蘆薈紫薯珍珠滑露，白色的凍椰蓉豆沙糯米糍，黃色的原味南瓜粟米布甸和芒果布甸，十分賞心悅目。新鮮生果有草莓，西瓜，獼猴桃，橙子，火龍果等等，都新鮮多汁，擺盤精美，下面鋪上一層乾冰，上桌時候仙氣飄渺，大家紛紛調侃最後壓軸出場的莫不是蟠桃吧。

團隊中的Chris ，特別喜愛用Bill William所創的指標，早前有學員問及Bill William的Dynamic Trader Oscillator，由於這並非Amibroker的內置指標，如何編寫也已經在我們的網頁中有示範。至於另一個同樣由Bill William所創的指標 ndash; Alligator Indicator，若同時利用這兩個指標，並只集中做開市初段的交易，以今日的市況為例，1030先由Alligator Indicator顯示應造淡，繼而在1034由Dynamic Trader Oscillator進一步確認可入市造淡，期指由24794點，期間曾反彈至最高見24809點，然後便跌至最低見24665點 當然，還是那一句，沒有無敵的指標，程式交易就是要多嘗試，總會能找到屬於自己而又能獲利的交易策略。Bill William的指標不少人用以交易外匯黃金，但近期好像較多人用以分析期指，是否實用，當然可以自行驗證，而入市的策略如何，可以說未必是原創者所指的便是最好，學懂利用程式大家也可以自行作出修改及進行backtest
