新年流流,最好喺屋企整嘢食,今次介紹三鄉菜餃餡料有: 1、椰菜10只(10多斤),切細,用鹽醃,扭乾水,白鍋炒乾 2、豬肉,半肥瘦豬腩肉,先用麵粉、鹽洗,再出水,煮,用鹽醃 3、蝦米,用薑片蒸過 4、冬菇,洗後切碎 5、火腿,蒸過切碎,可加些小蘿蔔幹 6、馬蹄,煲熟切碎,炒乾 全部材料加在一起,用鹽、醬油、糖,雞粉調味,放冷再包。 皮料:澄面、生粉 先用滾水倒入澄面攪勻,慢慢搓勻。加入生粉少量(1斤澄面加2湯匙生粉左右)再搓勻,軟硬適中便可。 用粉皮包入餡料,做成菜餃,水滾之後蒸15分鐘即可食用。 Thanks:Ms. Celine
